I see a lot of software out there that say they can copy a playstation or xbox game to CD-R. Do any of these work?

Yes with a BUT,
Playstation games have a built in copy protection, that is 'hard wired' to the disk and cannot be copied.
You can however get your console 'chipped' to bypass the protection, or there is a gismo available that opens the cd tray without pressing the button (which is when the copy protection is activated)
Either way involes modding your console, with the risk of it going faulty!
